Dry tomato pie

Ingredients:

1) 2 cups milk
2) 3 tablespoons of olive oil
3) 1 cup oil
4) 1 cup of white flour
5) 1 cup cornstarch
6) 4 garlic
cloves, minced
7) 1 onion, chopped
8) 4 eggs
9) one tablespoon baking powder
10) grated Parmesan cheese for sprinkling
11 + 12) salt and pepper to taste
13) 1 cup dried tomatoes, chopped
14) 500g frozen broccoli

Preparation:

In a saucepan place the oil, onion, garlic and fry for 5 minutes or until it begins to brown lightly. At this stage you can add leek and celery, for example.

Add the broccoli and salt and let it cook for 10 minutes or until soft, stirring occasionally. Remove from heat, let cool and then add the dried tomatoes. In this phase you can add grated carrot, as shown.

In blender, whisk together milk, cornstarch, flour, oil, eggs, baking powder and salt and pepper.

Pour half of dough made in the blender in a greased baking dish 20cm by 25cm.

Spread the filling.

Cover with the remaining dough and bake in preheated (350 F) oven for 30 minutes or until cooked and lightly golden.

Remove from oven and serve immediately.
